The vinification is made in red.  The must remains in contact for 8-10 days with solid parts inside an innovative fermenter called Ganymede. The primary characteristic of this fermenter is the ability to accumulate the carbon dioxide developed by the fermentation process of the must which then properly released will serve to obtain a homogeneous and optimum mixing of the pomace without The use of pumps or other mechanical organs.
