Description
Our vineyards are located on the flat strip near the Julian pre-Alps.  The soils are characterized by an important presence of stones often mixed with clays and silt. The areas were characterized by a series of sand dunes dating back to the Quaternary that until the middle of the last century were dedicated to mowing grass. The vineyards are located in an exposure that goes from the South / West and therefore in the best positions for the exploitation of the energy deriving from solar radiation. The sixth plant is on average dense with 3400 plants per hectare cultivated with spurred cordon for the varieties of pinot grigio, chardonnay and ribolla gialla.

Maturation and refinement Harvesting in a box of the selected grapes is carried out only in the morning, the grapes are crushed whole and softly. The first fermentation takes place in steel. At the following spring the yellow ribolla base is prepared for foaming. The bottles are stacked and the wine contained in it will remain in contact with the yeasts for at least 20 months. With the disgorgement the wine ends its journey, rests at least another 4-6 months in the cellar before being put on the market.

Flavor Durable foam. Straw yellow color and a very fine and persistent perlage. On the nose notes of white peach, pineapple, chamomile lemon balm and mineral. Notes of pistachio and candied lemon, complex and of great finesse. In the mouth excellent acidity, the sip is well balanced and leaves the palate clean and satisfied. Long finish, with a pleasantly dosed aftertaste between mineral and fruity notes.
Food matching Particularly appreciated in the summer but always appropriate in combination with white meats also in sauce, first courses with vegetable or fish sauces, rich salads, delicate appetizers and of course second courses of fish with condiments not too elaborate.
