The 100% Glera grapes cannot be called prosecco because it does not follow the specifications of the DOC Prosecco (refermented in the bottle). The harvest is done manually, during the month of September. Then the grapes are vinified in white with first fermentation in stainless steel tanks, bottling in April-May and naturally refermented in the bottle with subsequent deposit of yeast at the bottom. The wine is poured into the market after a minimum of 70 days after bottling and remains on the Lees until consumption. Straw yellow, fine and persistent perlage thanks to continuous contact with the Lees. The scent, continues and inevitable evolution is characterized by predominant aromas of ripe yellow fruit accompanied by notes of crusty bread and dried fruit. On the palate the wine is dry, balanced and persistent with scents that resurface the aftertaste; a sip decided and with a bitter aftertaste. From the best as an aperitif, fish and white meat. Serve at 6-8° C. Contains sulphites
