From grapes of Chardonnay and Pinot Noir was born Franciacorta Brut CruPerdu which is the symbol of the cellar. Usually from August 10th to August 25th with careful selection of the grapes. The grapes are delicately pressed, so as to extract the first-pressing must. The vinification takes place with removal of the must from the lees at low temperatures in order to exalt the fragrance and the elegance of the wine with fermentation at a temperature of about 14°C. The base wines, after the first fermentation in steel tanks and in barrels, ferment for about 8 months at controlled temperatures until the preparation of the blend, which is prepared with a skilful mix of wines refined in steel tanks and in barrels (about 15%). Brilliant and transparent pale yellow, with abundant froth and very durable and so fine sparkles. At Nose CruPerdu has a fragrant and intense bouquet of just baked bread and then white flowers like hawthorn and lime blossom and freshly peeled fruit like white peach and pineapple.
Taste is armonious, fresh and pleasantly acidulous, with an appetizing aftertaste of still unripe fruit. CruPerdu is a wonderful wine to be tasted alone or accompanied with any meal.
We recommend it especially with white meat, fish, shellfish and it is really splendid with lobsters or salmon. Contains sulphites
