With the Franciacorta Vintage Reserve Dosage Zéro combine the pursuit of perfection in the best vintages. A Castello Bonomi Franciacorta dosaggio Zero is the result of careful Cuvée Chardonnay and Pinot Noir, in equal portions. The grapes are rigorously handpicked and collected in small wood boxes to preserve their integrity. From the grapes we extract only the best must by soft pressure. The vinification is made with the help of cold techniques. We use every precaution to obtain a no-compromises quality. The Pinot Noir ferments in steel tanks. The Chardonnay ferments in oak barrels for 8 months. Once complete, they are carefully blended together for the second fermentation according to the Classical Method (similar to champenoise) to become sparkling.
A very long yeast refinement period is the secret of this Franciacorta Castello Bonomi Millesimato Dosage Zero’s success. In fact, it matures for 48 months before disgorgement and then a furher period of at least 10 months in the bottle to reach the perfect balance. Millesimato Dosage Zero is brilliant flaxen yellow Franciacorta, with a fine perlage. The first sensation is a breeze of white fruits, with sweet suggestions of vanilla, citrus hints and fresh herbaceous notes. Neat and remarkable fragrances of just baked bread crust. Millesimato Dosage Zero by Castello bonomi is silky, with a creamy effervescence and a long aromatic persistence, thanks to a beautiful harmony subtastained by a good structure. It goes well with with fish and crustacean crudité. It is perfect with every fish dish and also with light meat meals. Also enjoy during an important rendez-vous. Serve at 6-8°C. Contains sulphites

Di stoffa setosa ed effervescenza cremosa, presenta una bella armonia d’insieme e una notevole struttura che supporta una lunga persistenza d’aromi
Abbinamenti Se ne consiglia il consumo a tutto pasto con crudité di pesce e crostacei o baccalà mantecato. Ottimo con il carpaccio di sarago o con un risotto di scampi. Afrodisiaco con le ostriche.
